Salted duck egg has gained popularity in domestic market and its trading is doing well.
It is one of the most consumed foods and people enjoy it either fried or boiled.
“We buy eggs directly from a duck farm and make salted eggs by ourselves. Freshness of eggs is up to the quality of salting process. So freshness is essential for making either alkalized (century) egg or salted egg. If the egg is not fresh, losses will happen. Ethnics including Shan like salted egg. Some eat it fired and some eat it boiled, cut into halves and scoop it by spoon. And fried potato with salted duck egg is popular in the market. It sells well these days as there are festivals,” said a alkalized egg and salted egg trader in Mandalay.
Alkalized eggs are also in the list of best-seller items and its trading is also fine.
“People also enjoy century egg. It is sold well in festive period. People from other towns more enjoy it. So century egg sellers more rely on other towns’ market,” he said.
